First of all, don't rent from Payless car rental. By the time they put all of their mandatory insurance on there you will end up paying the same amount as the rental agencies in the airport. I thought we would be saving money by going away from the airport but i was wrong and it ended up being a big headache.
Our trip started with us flying into Cancun and spending four nights at the Marriott Casa Magna. we got a great deal using our AAA rate and going in the American off-season. Not sure what is so "off" about it since we had gorgeous weather. We have seen very few Americans and a whole lot of Mexicans though so it is apparently true.
What I love about this hotel.
our room - the 3rd floor is the best in my opinion. It is the only floor that has an extended balcony and this is true for the entire hotel. We also have had an ocean view. All the rooms are ocean view though with the exception of the first floor, this is because it is on ground level and so they cant see beyond the pool to the ocean. Those first floor rooms though have a very lovely garden terrace to walk out on. The beds are awesome, very comfy with fluffy pillows. lovely. i also love the Bath and Body works amenities in the bathroom. What can i say, i notice these simple things and they make me happy.

The beach There are stairs leading down to the beach and the Marriott provides lounge chairs and Palapas for your use. Since we were there in the offseason it was not difficult to get a Palapa to use. There were plenty to go around. When you are done at the beach there are outdoor showers at the bottom of the stairs for rinsing off.
The free fridge......like any resort hotel everything was expensive. So we drove to Walmart and stocked up on supplies and put it in our fridge. There is a mini fridge in the room but it's stocked with the mini bar stuff so we asked for another fridge at the front desk upon check in and they had it to our room within 15 minutes. I was surprised to see that it was a large fridge, between 3 and four feet tall so we were able to put sandwich stuff in there, milk, yogurt and of course plenty of diet coke. It saved us a lot of money.

We will only travel during off seasons! Less crowds, cheaper hotels. Good to know that July was a good month to go. We usually end up going at the end of May and same thing: the weather is amazing. I love Mexico!
