Zucchini Cakes

Do you have a zucchini sitting on your kitchen counter? Or perhaps you have one (or two) in your garden waiting to be plucked from it's watery vine? A month ago I encountered a recipe on Pioneer Woman Cooks that made my mouth water. I decided then and there that when I had a zucchini ready from my garden I was going to made them. It is this:

Emma? She didn't like them either. What do kids know?

I remember that recipe from last year. I made Logan grate all the zucchini that was on our counter today...so, this week we'll be making lots of bread and the cakes:)

I LOVE zuchini, unfortunately Benny thinks they are too healthy. As kids he and his siblings would pluck the blossom so his mom wouldn't have as many - that's how much he dislikes them. Tough luck though, I will make them anyway. What is the sauce you have next to it? or was that yogurt?
